We have all been there before.
You come home late and now it's time to fix dinner.
Here is a perfect fix!
You can have some for dinner and the leftovers are delcious for breakfast.
3/4 cup Whole Milk
2 1/2 cup Frozen Shredded Potatoes
3/4 cup Chopped Fresh Spinach
1/2 cup Cubed Gluten Free Ham (Optional or feel free to substitue other meat)
1 tablespoon Chopped Green Pepper
1 tablespoon Chopped Sweet Pepper
1 teaspoon Salt
1 teaspoon Chopped Fresh Chives
1/2 teaspoon Black Pepper
3/4 cup Shredded Cheddar Cheese
Preheat oven to 325 F. Grease a 5 cup shallow baking dish. Set aside. In a small mixing bowl beat eggs with a wisk until well blended and frothy. Beat in Milk. Set Aside.
In a large mixing bowl combine potatoes, 3/4 cup cheese, spinach, ham (if desired) green and sweet pepper, salt, chives, and black pepper. Mix well.
Add egg mixture to potato mixture.
Pour into the prepared baking dish. Sprinkle with 3/4 cup cheese. Bake about 45 minutes or until mixture is set and knife comes out clean when inserted in the ceter. Serve immediately.
Serves approximately 9.
